Chole Masala recipe
1.kabuli channa/chole-1 cup
Soak this in enough water for 8 hrs/ overnight .Pressure cook this with enough water for 1 whistle without adding salt.
2.Oil-1 1/2 tbsps
Cardamom-3
Cinnamon -1 " stick
Cloves-3
Bay leaf-1
Onions-2
Ginger-1 “piece
Garlic-3-4 big
Green Chillies-4
Curry leaves-1 sprig
Chilli powder-3/4-1 tbsp(adjust to your spice levels)
Tomato-2 big
Or tomato paste -1/4 cup
Chop the above ingredients seperately .Heat oil and add the whole spices.When nice aroma comes add the ginger, garlic,green chillies,curry leaves and sauté.Now add the sliced onions and sauté.When onions starts to brown,add the chilli powder and sauté.Add the chopped tomatoes and cook with little salt sothat the tomatoes blend nicely with the onions. I used tomato paste instead.Add 1/4 cup water and cook the mixture till oil seperates .Set this aside to cool.Once cooled,grind this to a smooth paste.
3.Mustard seeds-1/2 tsp
Onion-1 chopped
Curry leaves-1 sprig
Green Chillies-2-3
Oil-1 tbsp
Heat oil and splutter the mustard seeds and then all the above ingredients and sauté till lightly browned .
4.Coriander Powder-1 1/2 tsp
Garam Masala-1 tsp
Kasoori methi-1 tsp
Amchur powder-1/4 tsp
Add the coriander powder and garam masala and sauté on low heat.Now add the set aside ground onion,tomato & chilli paste to this.
Add little of the water from the cooked chole to this & cook till oil seperates.now add the cooked chole & let this simmer till the gravy thickens. I mashed few chole up to thicken the gravy.Now add theKasoori methi & Amchur powder and let this simmer.Adjust the salt and if needed 1/2 tsp garam masala too.Off the stove and add juice of half lime to this.adjust seasonings .garnish with ginger juliennes & corriander leaves.Serve with Battura or Parathas
