Chocolate Cake (with oil & butter)
1.All purpose flour-2 1/2 cups
Cocoa Powder-1/2 cup
Baking soda-1 1/2 tsp
Baking powder-1 1/2 tsp
Salt-1 tsp
Sieve together thrice & set aside.
2.Unsalted butter-1/2 cup(113 gms)
Refined oil-1/2 cup
Granulated sugar-2 cups
Powder the sugar granules.
[U can use 1 cup (226 gms) butter alone if you don't want to use oil.]
Cream together butter and sugar .add the oil and continue beating with the hand beater.
3.Eggs-4
Vanilla essence-2 tsp
Coffee powder-1 tsp
Hot water-1 tbsp
Dissolve the coffee powder in the hot water and keep aside.
Add the eggs one by one & beat in.Add the vanilla essence and coffee mixture to this.
4.Curd-1 cup
If your curd is too thick use 1/2 cup curd & 1/2 cup water mixed together.
Now add the set aside flour mixture in 3 additions starting & ending with flour and the curds in 2 additions.Do not over mix.
Pour into 2 round 8" tins lined with parchment paper.Bake in preheated oven at 180 C for 30-45 minutes or until a skewer inserted at the center comes out clean.
