Chilli Chicken
For marination
1.Chicken-1 1/4 kg
Chilli powder-1 1/2 tsp
Pepper powder-1/2 tsp
Soya sauce-1 1/2 tbsps
Salt to taste
Cut the chicken into medium/small pieces.Wash & drain. Add the Chilli and pepper powders,soya sauce and salt and mix in.Keep this in fridge for atleast 1/2 an hour.
2.Eggs-1 1/2
Cornflour-2-3 tbsps
All purpose flour-2-3 tbsps
Add the eggs to the marinated chicken & mix well.Now add 2 tbsps each of cornflour & maida(Apf) to this & mix in.If there is more of the liquid content i.e. the batter is runny & not well coated in the chicken you can add more of the flours & adjust sothat the chicken is well coated with flours.
Once the flour is added,you should immediately fry the chicken pieces.Heat oil & deep fry the chicken pieces till golden & drain on tissues.
For the gravy
3.Onion-2
Capsicum-1
Ginger-2 tbsps (chopped)
Garlic-2 tbsps (chopped)
Spring Onion-2 (optional)
Heat 2 tbsps oil in a nonstick kadai . Add the chopped ginger and garlic and saute for a minute. Add the cubed onions ,chopped white part of the spring onions and capsicum & Saute.
4.Chilli powder-1/2-3/4 tsp
Pepper powder-1/2 tsp
Green Chilli-3-4 crushed (I didn't add instead used 1 tsp Chilli powder).
Add the above ingredients and saute till the raw smell of the masalas vanish.
5.Chilli garlic sauce-2 tbsps
Thai Chilli sauce-2 tbsps
Soya sauce-1 1/2 tbsps
Chicken cube-1
Water-1/2 cup + 3tbsps
Cornflour-1 tsp
Add 1/2 cup water and chicken cube and let this come to boil.Now add all the sauces and allow it to simmer for few minutes .Now add the fried chicken pieces. Add the cornflour dissolved in 3 tbsps water to this & cook till the chicken is well coated with the gravy . Adjust the salt and add 1/2 tsp sugar to balance the flavors.Decorate with chopped green parts of spring onions .
Serve with fried rice or nan
Note:
This is a dry gravy.If you want more gravy you increase the amount of water from 1/2 to 2 cups and also use 1 tsp Chilli and 3/4 tsp pepper powder.
