Chicken Vindaloo
1.For the Vindaloo Paste
Cardamom-3
Cloves-4
Cinnamon-1 piece
Whole Pepper-12 no.”s
Mustard Seeds -3/4 tsp
Fennel seeds-1/2 tsp
Cumin jeera-1/4 tsp
Fenugreek seeds-1/4 tsp
Ginger-2” piece
Garlic-15 -20 no.’s
Coconut /Palm Vinegar -2 tbsps
Kashmiri Chilli powder-2 tbsps
Chilli powder-1 heaped tbsp
Turmeric powder-1/2 tsp
Coriander powder-1 tbsp
Ground all the above ingredients to a fine paste.Set this aside.
2.For the Gravy
Onions-2 big
Tomato-2 big
Chicken-1 kg
Oil-2-3tbsps
Sugar-1 tsp
Salt to taste
Coconut/Palm Vinegar-1 tbsp
Heat oil in a pan and sauté the sliced onions till browned.Add the masala paste and chopped tomatoes and sauté till raw smell vanishes.Add the chicken pieces and sauté for a minute or two.Add the salt and cover and cook on medium heat till the chicken is cooked through.
When the gravy thickens a bit add the vinegar and sugar and cook for a minute.Adjust salt .Chicken Vindaloo is ready.
