Chicken Kondattam
For Marination
1.Chicken-500 gm
Ginger garlic paste-1 tbsp
Chilli powder-1 1/2 tsp
Turmeric powder-a pinch
Pepper powder-1/2 tsp
Salt-3/4 tsp
Lime juice-1 tbsp
Rice flour-1 tsp
Corn flour-1 tsp
Marinate the chicken with all the above ingredients for 30 minutes.
2.Oil-4 tbsp
Shallow fry the chicken in 2 batches till done.
3.Shallots-5
Onion-1
Garlic-4
Whole red chillies-2-3
Curry leaves-2 sprigs
In the remaining oil fry the chillies and curry leaves and set aside.
Add in the crushed garlic,onion and shallots and sauté till lightly browned.
3.Chili flakes-2 tsp
Chili powder-1 tsp
Garam Masala-1/2 tsp
Coriander powder-1/2 tsp
Tomato ketchup-4 tbsps
Salt-1/2 tsp
Hot water-1/4 cup
Add in all the masalas and sauté on low heat.Add in the water and tomato ketchup and stir in.Once oil separates add in the fried chicken pieces,chilies ,curry leaves and stir in until well coated.Chicken Kondattam is ready.
