Chicken Ghee Roast
This Mangalorean Chicken Ghee Roast Recipe, will leave you drooling while reading the recipe. Dry roasted spices ground into a aromatic masala, coated on the chicken pieces which is then cooked in ghee for a rich and classy flavour. Chicken ghee roast is loved by most of the people in India as it is rich and has quite vibrant flavors from the homemade ground masala that is being used to cook the chicken.
For Marination
1.Chicken-1 kg
Yoghurt-1/2 cup
Turmeric powder-1/2 tsp
Chilli powder-1 tsp
Salt to taste
Marinate chicken pieces with all the above ingredients for an hour.
2. For the ghee roast masala
Whole Red Chillies 5-7
Whole Coriander-2 tbsps
Whole Pepper-1 tsp
Fennel Seeds-1 tsp
Cumin seeds-1/2 tsp
Fenugreek seeds-1/4 tsp
Cloves-6-7
Ginger-1” piece
Garlic-7-8 big
Tamarind-1 1/2 tbsp
Ghee-1 tsp
Kashmiri chilli powder-1 tsp
Dry roast all the whole masalas on low heat for few minutes until it’s aromatic .Remove this to a bowl .Add the ghee and roast the ginger and garlic till lightly browned.
Ground this together and add the tamarind soaked in water to it and the Kashmiri chilli powder and ground again to get a smooth paste by adding extra water.
3.Onion-1 big
Curry leaves-2 sprigs
Ghee-2-3 tbsps
Salt to taste
Heat ghee and add a sprig of curry leaves and then the chopped onions and sauté till lightly browned.
Now add the masala paste to this and cook on low heat by adding 1/4 cup water and salt,till oil separates.
Meanwhile in another pan add the marinated chicken pieces and sauté it for 2-3 minutes,often turning it.Now cover it with a lid and cook till it’s done.
Add in the cooked masala paste to this and stir in.Continue to cook this till the gravy thickens and is well coated in the chicken.
4.Sugar/Jaggery -1 tsp
Lime juice-1 tbsp Add in the remaining Curry leaves ,lime juice and sugar.Adjust salt.Chicken Ghee Roast is ready to serve with some Appams or Chappathis.
