Chicken Chukka

1.Chicken-1 kg

Clean the Chicken pieces and set aside.

For marinating the Chicken

2.Chilli Powder-2 tsp

Turmeric powder-1/2 tsp

Kashmiri Chilli Powder-1 tsp

Pepper powder-1/2 tsp

Garam Masala-3/4 tsp

Salt-1 tsp

Vinegar-1 1/2 tbsp

Marinate the chicken pieces with all the above ingredients for 30-50 minutes.Heat oil in a wide nonstick pan and Shallow fry the marinated chicken pieces on medium heat,keeping it covered with a lid,till golden on both sides.Remove the fried Chicken pieces to a plate.Add a tbsp of water to the leftover marinade and set aside.

For the gravy

Garlic-7-8

Ginger-1 “ piece

Green chillies-4-5

Curry leaves-2 sprigs

Tomato-2

Coriander leaves-few

Remove the excess oil leaving only 2 tbsps in the pan.Sauté the Curry leaves then the sliced onions & shallots till glossy.Add the crushed ginger,garlic and green chillies and sauté till starts to brown.Add the chopped tomatoes and salt and sauté till the tomato is mushy.Add in the leftover marinade to this and sauté till oil separates.Add the set aside fried Chicken pieces and cover and cook till the gravy coats the chicken pieces.Add the chopped coriander leaves and stir in.Adjust seasonings.Chicken Chukka is ready to serve with some Chappathis or Rice.
