Chicken/ Cheese Buns

Stuffed chicken/cheese buns

For the bun

1.yeast-1 tbsp

Sugar-2 tsp

Lukewarm water-1/4 cup

Add sugar and yeast to the water and set aside for 10 minutes

2.Milk-1/2 cup

Boil the milk and allow to cool down till lukewarm.

3.sugar-4 tbsps

Salt-1 1/2tsp (adjust according to your taste considering the salt in the filling too.)

Egg-1

Oil-1/2 cup

Add all the above ingredients to the lukewarm milk except egg and stir well till sugar is dissolved.Now add the egg and stir in.

4.all purpose flour-2 cups

Wheat flour-1 cup

Mix together and add to the above milk-egg-oil mixture 1 cup at a time & stirring in.add the risen yeast mixture after the first cup of flour .gradually mix in the remaining four till you get a smooth dough.

Now knead the dough for 10 minutes & cover & set this aside to rise for 2-3 hours until it doubles.Punch down the risen dough and divide into 14 balls.Place a ball in your palm & flatten it.Place the filling in the middle & reshape them into balls and place on a baking tray lined with parchment paper 1" apart since the dough rises a bit.

5.egg-1(beaten)

Water-1 tbsp

Beat the egg and water together lightly

White sesame seeds-1-2 tbsps

After u have stuffed all the balls with the filling & reshaped into balls ,brush the buns with the egg wash and sprinkle the sesame seeds over it and set aside to rise for another 20-30 minutes.(I preheated my oven for 10 minutes around 160 C and offed the oven and kept my 2 baking trays with buns inside it to rise for the second time since I thought my kitchen was not warm enough for the dough to rise & as my son was eagerly waiting to taste it)

After 20- 30 minutes brush again with the egg wash & bake in a preheated oven for 15-20 minutes at 180 C.Mine took exactly 16 minutes. This may vary depending on the type of oven you use.

I brushed the egg wash over the buns for the 3 rd time after 10 minutes of baking too.


For the filling

You can use any left over chicken curry shredded or cheddar/ mozzerella cheese chunks.

If you are using cheese just spice it up with little Chilli flakes,pepper,salt and dried parsley/oregano.

Chicken filling

1.left over chicken pieces from curry-5-6

Gravy from the curry-1/2 cup

Shred the chicken and discard the bones.Add to the gravy and cook until the chicken absorbs all the gravy.

2.If you don't have gravy then make it by sautéing an onion with some garlic and ginger crushed & a half tomato chopped to it.Add the following masalas

Chilli powder-3/4 tsp

Turmeric-a pinch

Corriander powder-1/2 tsp

Pepper powder-1/4 tsp

Garamasala-1/4 tsp

Now add the shredded left over chicken and 1/4 cup water sothat the chicken absorbs the masalas.cook till all the water dries up. This is your filling for the buns.Let this cool completely before stuffing into the buns.
