Chatti Pathiri
For the Chicken fillings
1.cooked chicken shredded-300 gm(2 cups)
Cashews-5-6
Kismis-12-15
Ghee/Oil-1 1/2 tbsps
Heat oil and fry the cashews and kismis and set aside.
2.onion-1 big
Ginger -1” piece.
garlic -4-5 big(Chinese ones)
Green chillies-2
Curry leaves-1 sprig
Salt to taste
Saute the sliced onions curry leaves and green chillies in oil.once it's glossy add crushed ginger and garlic and saute.
3.turmeric-1/4 tsp
Chilli powder-3/4 tsp
Corriander powder-3/4 tsp
Pepper powder-1/2 tsp
Garamasala-1/2 tsp
Add all the above masalas & saute in medium heat for a minute. Add 2 tbsps water to this & cook till the masalas r well cooked and oil seperates .
Now add the teared chicken,1/4 cup water and 1 tbsp tomato ketchup and cook till masalas coats well with the chicken and all the water dries up. Adjust seasonings.Add some chopped Corriander leaves & stir in.
For the Crepes
4.All purpose flour-1 cup
Wheat flour-1/2 cup
Salt-1/4 tsp
Pepper powder-1/4 tsp
Turmeric-a pinch
Egg-1
Water-as required
Beat the egg with a fork.Add the flours and salt and enough water to make a thin batter.Add in the turmeric and pepper powders and stir in.
Make thin crepes,the size of the pan you are going to use to cook the Chatti Pathiri.U will get 8 crepes with this batter.
For Layering the Chatti Pathiri
5.Eggs-3
Salt -1/4 tsp
Pepper powder-1/4 tsp
Milk-1/2 cup
Ghee-1 tbsp
Beat the eggs,salt and pepper together in a bowl.Pour the milk into another bowl.
Grease the nonstick pan with 1/2 tbsp ghee.First dip a crepe in the milk mixture and then in the egg mixture and then spread it in the greased pan.Repeat with another crepe so that the base layer is thick.(I didn’t do this so the base was broken a little bit.)
Now spread the chicken fillings over this.Repeat with the crepes and chicken layers with the 4 crepe s and the fillings.Final 2 crepes should be on the top.
Mix the remaining egg mixture and milk and poor it over it.Cover this pan with a tight lid.Keep this pan over another pan and cook over low flame for 25-30 minutes.
Clear the sides with a sharp knife and flip it onto another pan and cook for 5 more minutes by adding 1/2 tbsp ghee to the edges.
Chatti Pathiri is ready.Slice and serve .
