Carrot Halwa
Carrot Halwa Recipe
1.Milk-1 litre
Sugar-300 gm
Heat milk,setting aside 1 cup of milk,in a wide bottom nonstick pan and cook till it's reduced to 1/4 th of the original milk in medium heat often stirring & scraping the sides.Add the sugar & cook till it thickens. This is the sweetened khoya/mawa.Set this aside.
2.Carrot-300 gm
Ghee-2-3 tbsps
Cashews-6
Kismis-12
Cardamom powder-1/4 tsp (4-5 crushed)
Heat ghee and fry the cashews and kismis till golden & set aside.Add the carrots grated to the ghee and fry for a minute or two in medium heat.Now add the set aside 1 cup of milk and cover the pan with a lid and cook till all the water dries up and the carrot is cooked .Add the set aside sweetened khoya to this & cook till the mixture thickens a little bit.Add the cardamom powder and cook for another minute.Now add the fried cashews and kismis & remove from fire. The Carrot Halwa is ready to serve.
Note:
This Halwa is a little sweeter as my family prefers it that way. Those who want to reduce the sweet can use 100 gm sugar instead of 300 gm which I used.

today I made the koya with milk powder and did not add sugar to it and used only 300 gm sugar for 700 gm carrots as I used Pakistani red carrots (for making the Halwa) which was sweeter than the regular orange ones.You can adjust the sugar as per your liking
