Carrot/Gajar Halwa Cake

Carrot Halwa Cake (Eggless)🎂

This Indian Carrot pudding cake is incredibly moist with an eggless cake with soft crumbs, layered with an Indian sweet inspired melt in your mouth cream and then topped with a classic Indian dessert - Gajar ka Halwa.Those who loves the Carrot Halwa will love this melt in mouth fusion cake.

Eggless Vanilla Cake (with oil)

1.All purpose flour-1 1/2 cup

Baking powder-1 1/2 tsp

Baking soda-1/2 tsp

Salt-2 pinches

Sieve these dry ingredients together thrice and set aside.

2.Granulated Sugar-1 cup

Yoghurt-1/2 cup

Oil-1/2 cup

Milk-3/4 cup

Cardamom-2-3

Vanilla Essence-1/2 tsp

Powder the sugar along with 2-3 cardamoms and put it into a big bowl.Add in the yoghurt and oil and cream together with a whisk till well blended.Add in the essence and stir in.

Now add the dry ingredients in 3 batches and the milk in 2 batches starting and ending with the flour mixture .Do not over mix.Pour this into a 7” round pan greased and lined with parchment paper on the base.Bake this in a preheated oven at 180 C for 40-45 minutes or a tooth pick inserted at the center comes out clean.Mine was ready in 45 minutes.

For the Sugar Syrup

3.Sugar -1/4 cup

Water-1/4 cup

Cardamom-1 big

Heat together all the above ingredients in a vessel till sugar is dissolved.Allow it to cool.

For Frosting

4.Whipping Cream-1 1/4 cup (use a cream which is 35% above fat content)

Vanilla essence-1 tsp

Sugar powder-5-6 tbsps (omit if your whipping cream is sweet)

Carrot Halwa-1 cup

Salted Pistachios-1/4 cup

Just pulse(not grind)the pistachios and keep aside.

Keep the whipping cream and blades in the freezer for 10 minutes.

Whip the cream along with the sugar powder and vanilla till whipped through.

Assembling the Cake

Cut the cake into 3 layers.Apply some whipped cream onto the cake board and place top layer of cake on it. Soak it with sugar syrup.Add some whipped cream and spread it evenly.Sprinkle 1/2 cup of Carrot Halwa evenly over this,avoiding the edges,as it may come out of the sides.

Now place the second layer of cake and repeat the above process.Soak the last layer of cake with sugar syrup from the inside and carefully place it over so that browned base of the cake comes as top,to get an even top.Apply the sugar syrup on the top too.Now spread the whipped cream onto the top and sides of the cake and refrigerate for 20-30 minutes .

Smoothen the frosting and apply another coat with the whipped cream.Refrigerate for 10 minutes and carefully coat the sides with crushed pistachios.

I had some whipped cream left,so added some Wilton green gel to it and piped borders on the base and top of the cake.Made some small balls with the carrot Halwa and place it on top and sprinkled some leftover crushed pistachios on top.

Carrot/Gajar Halwa Cake is ready.Refrigerate overnight or for 5-6 hours before cutting for the flavors to absorb.


Notes:

U can make the cake a day ahead and the Carrot Halwa 2 days before you plan to assemble the cake.
