Beef and Koorka (Chinese potatoes)
1.Beef-1/4 kg
Chilli powder-1/2 tsp
Turmeric powder-1/2 tsp
Coriander powder-1/2tsp
Vinegar-1 tsp
Salt to taste
Marinate beef with all the above ingredients for 15 minutes.
Pressure cook this till done.
2.Koorka(Chinese Potatoes)-2 cup
Remove the outer cover of the overnight/4 hours soaked Koorka & cut into medium chunks.Add a pinch of turmeric powder and salt and 3 tbsps of water to the Koorka & cook it in a pressure cooker for a whistle.
3.Onion-1 big
Ginger-1/2” piece
Garlic-4-5 big
Curry leaves-a sprig
Coconut oil-2 tbsp
Sauté the curry leaves and then the chopped onions in hot oil.Add crushed ginger and garlic & sauté.
4. Chilli powder-1 tsp
Coriander powder-1 tsp
Pepper powder -1/2-3/4 tsp (adjust according to your spice level)
Garammasala-1/4 tsp (optional)
I usually add the Garammasala.
Add the Chilli ,pepper and coriander powder on low heat & sauté for a minute.Now Add some stock of the cooked beef & cook till oil separates.Now Add the the cooked beef & Koorka along with the remaining stock and the Garammasala & cook till all the water dries up and masala is well coated on the beef and Koorka .Adjust salt.Beef & Koorka is ready.
Note: To clean the Koorka,u have to soak it in water overnight.And then drain and put it in a rice bag and beat it down several times so that the black outer covers is removed easily.Then wash and remove the leftover cover using a knife.Make sure you always immerse them in water to prevent it from discoloring .
