Barbecue Chicken & Potato Wedges(Oven baked)
1.Chicken-1 1/4 kg
Clean the whole chicken & patdry with kitchen tissues.Loosen the outer skin and prick with fork or knife.
2.For the marinade
Ginger Garlic paste-1 1/2 tbsps
Garlic-3 chopped
Fresh Parsley chopped-1/4 cup(set aside half for the potatoes)
Garlic powder-2 tsps
Chilli powder-2 tsps
Black pepper powder-2 1/2 tsp
Salt to taste
Mustard Paste-1 tbsp (used Heinz yellow mustard)
Barbecue sauce-1 tbsp
Soya sauce-3 tbsps
Honey-2 tbsp
Olive oil-2-3 tbsps
Mix all the above ingredients in a big bowl and apply on the chicken & underneath the skin .Cover the bowl with cling wrap and refrigerate for 5-6 hours or overnight.
Remove the chicken from fridge 1/2 an hour before you bake sothat it comes to room temperature.After 20 minutes,preheat the oven at 200 C Meanwhile we can cut the vegetables .
3.Potatoes-2-3 big
Pepper powder-1 tsp
Salt to taste
Olive oil-1 tbsp
Clean and patdry the potatoes and cut into wedges.(U can parboil the potatoes if you want & then bake)
Apply salt and pepper .Add the set aside chopped parsley and olive oil.Arrange the potatoes on a baking tray.
Place the marinated whole chicken above this and pour some of the marinade liquid over the chicken and bake for 45 minutes to one hour or till done.
In between you can flip the chicken twice and brush with the remaining marinade sothat the outer skin doesn't dry out . If your potatoes are not fully done by the time the chicken is cooked through,then remove the chicken and bake the potatoes for another 10-15 minutes
