Banana Walnut Cake

1.All purpose flour-1 1/2 cup

Baking powder-1/2 tsp

Baking powder-1/2 tsp

Cinnamon powder-1 tsp

Salt-1/2 tsp

Sieve together and set this aside .

2.Banana-2 big(or 4 small)

Butter milk-1/2 cup

Mash the bananas with a fork or blend it in a blender till smooth.This should be 1 cup.

If you don’t have butter milk make it by adding 1 1/2 tsp vinegar to 1/2 cup lukewarm milk and setting aside for 10-15 minutes.

3.Unsalted Butter-115 gm(1/2 cup)

Brown Sugar-1/4 cup

Granulated Sugar-3/4 cup

Powder the granulated sugar .Cream together room temperature butter with both the sugars using a beater till creamy.

4.Eggs-2

Vanilla essence-1 tsp

Add the eggs one at a time and beat till well incorporated.Add the vanilla and beat in.

Now fold in the flour in 3 additions and the butter milk and bananas in 2 additions,starting and ending with flour.

5.Walnuts-1/2 cup

Roast the walnuts for 2-3 minutes till light brown.Cut into small pieces.Fold this into the batter reserving some to add to the top .

Pour the batter into an 8” round cake tin lined with parchment paper.Sprinkle the set aside walnuts on top of the batter.Tap the pan on the counter top to release any air bubbles.

Bake this in a preheated oven at 180 C for 30- 40 minutes or until a skewer inserted at the center comes out clean. I baked this in the convection mode of the microwave and it took exactly 36 minutes .
