Banana Waffles
1.Dry Ingredients
All purpose flour (Maida)-2 cups
Baking powder-1 tbsp
Sugar-4-5 tbsps
Salt-1/4 tsp
Cinnamon powder-1/4 tsp
Cardamom/Nutmeg-a pinch
In a bowl mix together the above dry ingredients with a fork/ whisk.
2.Wet ingredients
Egg-1 (lightly beaten)
Olive oil/melted butter-1 tbsp
Milk-1 1/2 cups
Very ripe Bananas-2
U can use 2 robusta or 4 poovan/palayanthodan Pazham for this. I n another bowl mash the bananas well with your hands/fork .Add the egg & oil & mix well.Now Add the milk & mix thoroughly .(U can use a mixie to blend all the Wet ingredients if you want).
Add milk mixture to the flour mixture and stir in until just moistened. If the mixture is too thick u can add some water .
Heat the waffle iron and slightly grease it with oil .Pour 1- 2 laddle of batter onto the waffle maker on each half (Mine has two portions as shown in picture) and close the lid & cook 3-4 minutes (according to your waffle maker instructions)or until lightly browned.Serve with maple/ golden syrup . I served with Panam Paani.
