Banana Date Bread/Cake with Oats & Wheat
1.All purpose flour-115 gm
Oats flour-50 gm
Wheat flour-50 gm
Baking powder -1 tsp
Sieve this together thrice and set aside.
2.Bananas-2 big/4 small
Hot Milk-4 tbsps
Baking Soda-1/2 tsp
Mash the bananas with a fork in a bowl or blend it to a smooth paste. It comes to around 1 cup.
Add the baking soda to the hot milk and stir in.When this turns lightly foamy,pour into the mashed banana mixture.
3.Brown Sugar-175 gm
Eggs-2
Unsalted Butter-125 gm
Now add the brown sugar and whisk in.Add the eggs one at a time and whisk in.Now add the melted butter and whisk in.
4. Dates-20
Mixed nuts-1/2 cup (optional)
Chop the dates and add to the sieved flour mixture.Now add the flour mixture in two batches and fold in.Pour the batter into a loaf pan or a 6” pan.Top with chopped nuts.Bake this in a preheated oven at 180 C for 45-55 minutes or until a skewer inserted at the center comes out clean.
Today I made with half the recipe and baked in two small pans for 30-33 minutes.Once done let it cool on wire racks and then slice.
