Awadhi cuisine is from the place Lucknow,the capital of Uttar Pradesh.
Awadhi Chicken Curry
1.Chicken-1 kg
Turmeric pwdr-1/2 tsp
Chilli pwdr-1 1/2 tsp
Corriander pwdr-1 1/2 tsp
Salt to taste
Marinate chicken with the above masalas for 1/2 an hr.
2.Onions-2
Cashews-8-10
Fry the cashews & set aside.now fry the sliced onions till brown.Grind the fried cashews & onions with enough water to a smooth paste.
3.tomatoes-2
Purée the tomatoes.
4.ginger & garlic paste-1 tbsp
Cardamom -3-4
Cinnamon -2 pieces
Sauté the spices in 1 tbsp oil.add the ginger-garlic paste & sauté.now add the marinated chicken pieces & sauté on high flame till the juices are sealed.Add the puréed tomatoes & cover & cook on medium flame for 10 minutes/ till chicken is well cooked.now add the grind onion & cashew paste & 1/2 to 1cup water to this so that there is enough gravy.adjust salt.add chopped corriander leaves to this.serve with roti,naan or quboos.
