Apple Cake
1.maida-2 cup
Baking soda-1 tsp
Cinnamon pwdr-1 1/2 tsp
Sieve together & set aside.
2.Sugar-3/4 cup
Apple-2 big or 3(small)
Finely Chop the apples (I used a chopper for this) .U can grate the apples using a grater also.but this shud be done only when u r ready to melt the sugar.otherwise the apples will turn brown.(no need to peel the apples.)
In a pan melt the sugar .when all sugar is dissolved & slightly golden, add the finely chopped /grated apples to this & mix well.turn off the stove & allow this to cool.
3.sugar-3/4 cup
Eggs-3
Refined oil-1 cup
Vanilla essence-1/2 tsp
Beat the eggs & sugar till fluffy.add the oil & vanilla & beat till creamy.
4.Cashews-1 cup(broken)
Fold in the dry ingredients sieved together & the apples & nuts in two or three batches till well mixed.If the batter is too thick u can add 1/4 to 1/2 cup milk to this to get a smooth batter.
Bake in a preheated oven for 35-40 minutes or until a skewer inserted in the middle of the cake comes out clean at160 C
Baking time may vary with different types of ovens.So check after 30 minutes with a skewer.
Topping
1.Caramalised syrup-2 tbsp
2.Butter-175 gm
3.sugar-100 gm
4. Condensed milk-1 tin
Mix together in a pan & place in medium heat & cook till lightly thickened[pouring consistency].Place the cake on a wire rack & place a parchment paper beneath the rack to collect the drippings.Pour this over the cooled cake.This will thicken once cooled.
