Tiramisu
Tiramisu is a coffee-flavoured Italian dessert. It is made of ladyfingers dipped in coffee, layered with a whipped mixture of eggs, sugar, and mascarpone cheese, flavoured with cocoa.
Since my kids doesn’t like uncooked eggs in the desserts, I used whipped cream instead of whipped egg whites for the dessert.
Tiramisu (serves 10)
1. Boiling water-1 1/4 cups
Coffee powder-3 tbsps
Rum-6 tbsps
In a bowl, stir together Coffee powder,hot boiling water and set this aside to cool.Add in 3 tbsps rum and stir in.
2.Egg yolks-6 large
Granulated Sugar-3/4 cup
Vanilla essence-1 tsp
Whisk together the egg yolks and sugar. Place over steam (on a saucepan with simmering water) and whisk 9-10 minutes on low heat until the mixture is lighter in color and slightly thickened. Remove from heat and let cool slightly .Add in a tsp of Vanilla essence to it and then beat it with a beater so that the mixture cools and dissolves any sugar granules left.
3.Mascarpone Cheese-450 gm
Whipping cream-1 3/4 cups
Sugar powder-3-5 tbsps
Beat the room temperature Mascarpone cheese with the beater adding the remaining 3 tbsps rum.Now pour some of the beaten cheese mixture to the egg custards and fold in.Repeat till both the mixtures are well blended.(If your cheese mixture is cold then it will be granny when you fold in with the egg custards).
Beat the whipping cream by adding 3-5 tbsps of sugar powder till fluffy.Fold in the mascarpone cheese and custard mixture with a spatula.Tiramisu fillings is ready.
Assembling the Tiramisu
4.Lady fingers-40-45
Unsweetened Cocoa-2 tbsps
Begin by quickly dipping each of the lady fingers into the soaking liquid for about 5-10 seconds. Do not drop it in and let it sit or it will soak up too much liquid and fall apart. Remember, homemade lady fingers are more delicate than store-bought. If using hard store-bought you will need to soak them longer.
Arrange it in the bottom of a 13 x 9”dish then spread 1/2 of the filling mixture evenly on top of the soaked lady finger.
Repeat with another layer of soaked lady fingers and pour the remaining tiramisu fillings evenly over them.
Refrigerate overnight. Dust with cocoa powder before serving. It is ok to dust with cocoa ahead of time - it will just darken it in color from the moisture.
Note:
1.My dish was 10 x 8 so had to make 3 layers of soaked lady fingers and fillings.
2. I used a mix of homemade and store bought lady fingers.
