Raffaello Pudding

This is a creamy and rich pudding which tastes as delicious as the famous Raffaello chocolates 🍫.The White chocolates,Almonds & Coconut flavors makes it yummy even for kids and the creams add to the richness of the pudding.This is an easy pudding which comes together in minutes and doesn’t have any cooking involved .So it’s easy even for kids to make it.

Raffaello Pudding (Serves 25 people)

1.Gelatine-10 gm

Water-2-3 tbsps

Soak the gelatine in water.Once soaked (around 15 minutes)add 3 tbsps boiling water to this and stir in till dissolved.Set this aside.

2.Almonds-1/2 cup

Grated White Chocolate-11/2 cup

Desiccated Coconut-1 1/4 cup

Pulse/ powder the almonds.Grate the white chocolates. I used galaxy white chocolate 5 bars of 38 gm each.

Mix together half of the desiccated coconut ,half of the powdered almonds and 1 cup white chocolate grated in a bowl.Set this aside.

3.Coconut milk powder-200 gm(2 cups)

Condensed Milk-1 tin

Sugar Powder-1/2 cup

Fresh Cream-200 gm

Whipping Cream-500 ml (2 cups)

I used Maggi coconut milk powder and Almarai fresh cream and whipping cream (red ones).

Put all the above ingredients in a big steel bowl and use a beater to beat till creamy (and well mixed).

Now add the set aside dissolved gelatine and beat in.

Add the set aside chocolate,coconut & almonds mixture to this and beat again till well mixed.Pour this Pudding into a big rectangular pudding dish and refrigerate for an hour.

4.White & Choco Pops cereal-as required

Mix together the remaining almonds powdered and White Chocolate grated in a bowl.

Remove the pudding from the refrigerator after an hour and decorate with the desiccated coconut ,Chocolate and almond mixture.Refrigerate overnight.

Once set the Raffaello Pudding is ready to Serve.Decorate with the white and choco pops just before serving otherwise it will be soggy.
