Quinoa Horse gram/Mudhira Dosas(Instant Dosas)

Quinoa Mudhira Dosas (instant,yields 7-10 dosas)

1.Quinoa-1 cup

Horse gram/Mudhira-1/4 cup

Fenugreek seeds-1/2 tsp

Wash the mudhira & quinoa together 3-4 times or until the water is clear.Soak this in water for an hour.Drain the water after an hour

2.Watermelon Rinds-1 1/2 cup

Or Cucumber-1 big

Shallots-5-6

Curry leaves-4-5 sprigs

Green Chillies-4-5

Coconut grated-2 tbsps

Cumin-1/2 tsp

Salt to taste

Cut the watermelon rinds (after discarding the thick green outermost parts) or Cucumber into small pieces (without peeling the green cover) and put into the mixie/ blender jars.Add the shallots,cumin, coconut,salt,green chillies,curry leaves and ground together to a smooth paste by adding 1/4 cup water.Now add the soaked quinoa & mudhira and blend to a smooth batter.

3.Poha/Cooked Rice-1/4 cup

If you’re using Poha just wash and soak it for 10 minutes.Now add the cooked rice or soaked poha and grind again to make a thick batter .Add extra water (around 1/2 cup) to make the consistency of dosa batter.

Heat a dosa pan and make dosas by pouring 2 ladles of batter on the tava and spreading it evenly .Drizzle some oil and cook on medium heat till browned on one side.Flip and cook the other side too.Instant Quinoa Mudhira Dosas are ready.Serve it with Sambar and Chutney.

Note:U can peel the skin of the cucumber if you want.Then the dosas will be light green in color.
