Queen of Puddings
1.Bread pieces-1 cup(cut into small pieces & firmly packed)
Milk-2 cups
Soak the bread pieces in milk for 1/2 an hour.
2.Butter-2 tbsp
Sugar powder-1/2 cup + 1/2 cup(divided)
Eggs-3
Seperate yolk & white of eggs
Beat together 1/2 cup sugar powder,butter & the egg yolks till fluffy.now add this to the soaked bread mixture & pour into a buttered glass dish & bake in a preheated oven at 180 C till done.around 40-50 minutes.
Meanwhile beat the egg whites with the remaining 1/2 cup sugar powder till it forms stiff peaks.
Once the pudding is baked,take it out & spread pineapple vilayichhathu/jam over it.Now spread the beaten egg whites over this with a knife.Bake in a preheated oven at 130 C till golden.Once it's fully golden on top,off the oven & let the pudding remain in the oven for another 1/2 an hour sothat the meringue sets well.If you take out the pudding once it's golden on top the meringue will fall once it's cooled.u can serve it hot or cold.
