New York Cheese Cake š° š§ for the in-house cheese cake lovers
New York Cheese Cake with Strawberry Compoteš (Yields 10 pieces)
1.Digestive Biscuits-150 gm
Unsalted Butter-70 gm
Crush the biscuits and add melted butter to this and mix.Press this firmly to the bottom of a 5ā springform pan.
Brush the inside sides of the pan with butter and line the sides with parchment paper.
2.Cream Cheese-400 gm
I used Philadelphia Cream Cheese š„Æ
Sugar-120 gm (u can increase it if you want it sweeter.since I was serving the cheese cake with Strawberry Compote this much sugar was right for us)
Beat the cream cheese and sugar together till creamy. I used a hand whisk for this.
3.Sour cream-200 gm(I used Almarai)
Heavy Cream-150 ml ( I used Puck thick cream)
Add the sour cream and beat in.Now add the thick cream and beat in.
4.Eggs-2
Cornflour-2 tbsps
Lemon juice-1 1/2 tbsps
Vanilla Essence-2 tsp
Whisk the eggs with a fork and add to the mixture.Add the juice,essence and corn flour and gently stir in.Pour this batter over the biscuit base.
Preheat the oven to 170 C .Now place a glass of water in the oven and bake the Cheese Cake at 170 C for first 30 minutes.Then reduce the temperature to 150 C and bake for another 20 minutes.Again increase the temperature to 200 C and bake for 15 more minutes.
Now off the oven and slightly open the oven doors.Let the Cheese Cake remain in the oven for an hour.After an hour remove the Cheese Cake from the oven and let it cool.Once cooled refrigerate overnight or for at least 8 hours .
5.Strawberries-250 gm
Sugar-1/2 cup
Cloves-2
Salt-a pinch
In a pan add the chopped strawberries and all the remaining ingredients and let it sit for 15-20 minutes.
6.Corn flour-1 1/2 tbsp
Lime juice-1/2 a lime
Add to the above and heat it.Once the mixture thickens off the stove and allow it to cool.U can blend or sieve this if you want a smooth Compote.
After 8 hours slice the cooled New York Cheese Cake š° and pour some strawberry Compote on top and serve.
