Mini Oreo Cheesecakes

1.Cream cheese-16 oz /452 gm

(I used two 8 oz packs of Philadelphia cheese)

Sugar-2/3 cup/130 gm

Bring the cream cheese to room temperature and beat it with sugar till creamy with a beater on low speed (cause we don't want any air in the batter)

2.Eggs-2

Vanilla extract-1 tsp

Sour cream-1/2 cup

Add the vanilla and the eggs 1 by 1 & beat lightly.Now add the sour cream and beat in.

3.Oreo cookies--8

Lightly crush and add to the above and mix in.

4.Oreo cookies as reqd

Line your muffin tins with cupcake liners and place half of each cookie with the cream side facing up.Pour the batter over this.

Bake in a preheated oven at 150 C for 18-22 minutes till sides are set and the middle is wobbly

Mine took exactly 19 minutes.

Allow this to cool in the pan for 1/2 an hour and then on a wire rack.(if you try to remove it immediately from the pan it might crumble)

Place in the refrigerator for 2 hours .Remove the cupcake liners and serve with whipped cream and mini Oreo on top I didn't have any cream so simply poured some chocolate syrup and served.
