Jam Roll/Swiss Roll
1.Eggs-3
Sugar (granulated)-1/2 cup
Beat together till light & fluffy and the sugar is dissolved (12-15 minutes)
2.vanilla essence-1 tsp
Add to my above & beat.
3.all purpose flour-1/2 cup and 3 tbsps
Cornflour-1 tbsp
Sieve together and fold into the above gently in three batches.
Pour into a lined 9 x13 Swiss roll tin and bake in a preheated oven at 180 C for 12-15 minutes until the top is golden & springy to touch (mine took exactly 14.30 minutes-I baked in a 9" square tin.)
While the cake is baking heat 6 tbsps jam( any flavor-I used mixed fruit jam) in a pan and set aside.
Place a tea towel on the counter top and place a parchment paper over this.Sprinkle sugar in the parchment paper and unmould the cake onto this after removing from oven.Roll it away from you along with the parchment paper. And cover it with the tea towel for a minute or two.Now unfold and spread the jam .Roll once again .once cooled slice and serve.
Notes: Today I separated the yolks and whites and beat the eggwhites till stiff, adding the sugar.Then added the yolks and beat in.Also used homemade pineapple jams as fillings
