Oats Paniyaram (yields30-32 no.’s)
1.Oats flour -1/2 cup
Semolina-1/2 cup
Salt-1/4-1/2 tsp
Curd-3 tbsps
Water-3/4-1 cup(as required)
In a bowl add the flours and salt.Add in the curds and stir in.Add water as required to make a batter.Set this aside for 30 minutes.
2.Onion-1 small
Ginger-1 tsp
Green chilies-2
Curry leaves-few
Coriander leaves-2 tbsps
Carrot-1/2
After 30 minutes add in all the above ingredients chopped and grated carrots and stir in.(u can add any veggies u like).
Add the remaining water to adjust the consistency of the batter,if it’s thick.
3.Eno-1/8 tsp
Water-1 tsp
Coconut Oil-1 tbsp
Add in the Eno and water and stir in.
Now heat a paniyaram/unniyappachatty and pour in a drop of coconut oil in all the holes.Once heated,add a tbsp of batter to each of the holes and cover it with a lid.Once the bottom is lightly browned,turn the paniyaram and cook the other side too.Remove the paniyaram to a plate and repeat the process with the remaining batter until it’s used up.Serve the Oats Paniyaram with coconut chutney.
Note:u can use baking soda instead of Eno.
