Hot cross Buns ...(.1:1 atta:maida)
For the dough
1.Atta/wwf-2 cups
Maida/Apf-2 cups
Salt-2 tsp
Sugar-1/2 cup
Cinnamon powder-1 1/2 tsp
In a bowl mix all the above ingredients setting aside 1 tbsp of sugar.
2.Lukewarm milk-3/4 cup
Lukewarm water -1/4-1/2 cup (as required )
Instant/Active dry yeast-2 tsp(used a mix of both as I ran out of stock of instant yeast)
In a bowl add the lukewarm milk,1 tbsp sugar (set aside) and the yeast.Let it froth.Once risen add to the above dry ingredients and mix.
3.Eggs-2
Add to the above mixture and mix.Now add enough lukewarm water to make a sticky dough.
4.Butter/oil-2 tbsps
Knead the dough for 5-10 minutes and add the butter and knead for another 5 minutes to get a smooth dough.Cover and Set this aside for the dough to rise/double the original size in an oiled bowl.This may take from 1-2 hours depending on how hot your kitchen is.
5.Soaked dry fruits-1/2 cup
Punch the risen dough and add the dry fruits and knead in ,adding some flour.Now divide the dough into 15-18 portions and roll them into balls .Place them on trays lined with parchment paper.
For the cross
6.maida/Apf-3/4 cup
Water-1/4-1/2 cup (as required to make a pipe able consistency )
Mix the flour & water to make a thick paste.Put this in a plastic bag and cut one end off & pipe a cross over the Buns .
7.Milk-1/4 cup
Sugar-1 tbsp
Stir the milk and sugar till sugar is dissolved.Gently brush the bun tops with the milk wash and set aside for the second rise.
The second rise may take around 30 minutes to 1 hour.
After the second rise,brush the top again with milk wash.
Bake in a preheated oven at 200 C for 20-25 minutes or until top is well browned .
8.For the glaze
Sugar-4 tbsps
Water-1/2 cup
Once the Buns are baking,prepare the glaze by boiling together the sugar and water until sugar dissolves and then allowing to simmer for few minutes.Once the buns are done,brush hot glaze over the warm buns.Place the Buns over a rack to cool off. The Hot Cross Buns are ready to eat as it is or serve with some jam.
Note:The fit’s pictures are made with all purpose flour alone and the darker buns are made with a mix of wheat and all purpose floura.
