Gulab Jamuns
1.Milk pwdr-1 cup
Maida-5 tbsp
Baking soda-1/2 tsp
Mix together with a spoon so that it's well combined.
2.Butter-1 tbsp
Rub in butter.
3.yoghurt-1/4 -1/2 cup
Add 1 tbsp at a time till all mixed up & little soggy but not too watery.(look the pictures for right consistency).set this aside for 1/2 an hr.
4.sugar-2 cup
Water-2 cups
Cardamom -2
Meanwhile in a vessel heat the sugar & water along with cardamom splited till it's well boiled.
Now make small balls with the mixture.I made balls & oval ones as u can see in the pict.
Those who like kismis can make balls by placing them in the centre & then make balls.kismis versions are so delicious .I didn't use them cause my kids just discard them.
5.Oil for frying
Heat a Kadai/cheenachatti with enough oil so that the jamuns r well immersed.
When oil is hot just remove the kadai/chatti from the flame & add 10-12 jamuns to it & then return it on the flame (medium flame) & fry till it's golden.
U can see that the jamuns have doubled .remove jamuns & add to the hot sugar syrup(if the sugar syrup has cooled down while making the balls, just heat them up).
Remove the chatti from the flame(I usually keep it on the adjusant stove) & then add the next batch of 10 & fry till done.
I usually pour the syrup to a rectangular dish so that the jamuns have enough space to get soaked.u can also use 2 containers & remove the ones already soaked to the second one.
When it's all done, u can add 1/2 tsp vanilla/ rose essence to the syrup .I usually add vanilla to it.
