Freshly baked Bread with wwf: Apf at 1:1
Milk Bread Recipe
1. Instant Yeast-2 1/2 tsp
Sugar-3 tbsps
Lukewarm Milk-1 cup
Combine the above ingredients in a cup or bowl.Set this aside to rise for 10 minutes.
2.Whole wheat flour-2 cups
All purpose flour-2 cups
Salt-1 1/2 tsp
Lukewarm water-3/4-1 cup
Milk powder-3 tbsps
Once the yeast has bubbled up,transfer it into a big bowl. Add the milk powder and 3/4 cup water to this.Now add the salt and flours 1/2 cup at a time & mix in with a spoon.
Add the flours till you get a sticky dough which starts pulling off from the sides.By the time you might have used up all the flour except 2-3 tbsps .Add extra water if required to make the sticky dough.(It may depend upon the flours you use)
3.Olive oil-3 tbsps
Now remove the dough onto the countertop & start kneading for 5 minutes adding the remaining four if required. Now add the 2 tbsps of olive oil and continue kneading for another 10 minutes or until the dough passes the window pane test.
(Take a small portion of the dough and stretch it between your hands.If the dough stretches without breaking and when it's placed against the windows you can see the light passing through the dough,your dough is ready for rise. This is the window pane test.If the dough breaks,you might need some more kneading.)
Keep the dough into a well oiled bowl and cover.Set this aside for the dough to double.This may take around 1-1 1/2 hours.
After the first rise,punch the dough and place on countertop and roll into a rectangle with a rolling pin.Now tightly roll into a log & pinch the edges. Now lightly grease a loaf pan and place this into a loaf pan.Cover with cling wrap & set this aside for the second rise.This may take another 30-45 minutes.
After the second rise brush the top of the loaf with a mixture of milk and sugar and sprinkle some sesame seeds on top.Bake this in a preheated oven at 190 C for 20-35 minutes or until the smell of freshly baked bread arises.Another way to check whether your bread is done is to gently tap at the top and if you here a hollow sound, then it's done.
Mine was done in exactly 20 minutes. This may vary from oven to oven,pan to pan.You are the best judge of your oven.
Once the bread is done,remove from pan and on to the racks and brush the top with butter.Cover the bread with a kitchen towel sothat it doesn't dry out while cooling. The bread might take 2-3 hours to cool completely.Once cooled,slice it.
Note
1.U can replace milk powder with milk. Then use 2 cups of milk instead of milk powder and water
2.The required milk/water may vary with the atta/wwf you are using
3.I used 250 ml cup for measuring
4.My loaf pan was Prestige 9"x5" size.If your loaf pan is dark in color reduce the temperature by 10 C.
5.I used my conventional microwave for baking.If you are baking in an OTG bake at 200 C
6.If you are baking breads for the first time try with buns or with maida bread as they need less kneading .
