Making of Egg Dosa .....U can add some chopped shallots too if you like
For Dosa batter
1.Raw Rice-1/2 cup
Urad dal-1/4 cup
Fenugreek seeds-1/4 tsp
Soak the rice for 5-6 hours. In another bowl soak the urad dal & fenugreek seeds for 2 hours.
2.Cooked rice-1/4 cup
Salt to taste
Grind the urad dal and fenugreek mixture to a smooth paste adding some of the soaked water in a mixie.Remove it into a bowl.Now grind the soaked raw rice by adding water to a smooth paste .Add the cooked rice & salt and grind till u get a smooth batter.Remove and add to the above dal batter and mix.Set this aside to ferment for 6-8 hours or overnight.
The next day Remove some of the fermented batter to a bowl . If the batter is thick add enough water to make it loose.
Heat a nonstick pan and pour 2 ladles of batter to the center of the pan and spread the batter with the back of the ladle into a thin circle .
3.Egg-1
Pepper powder-1/4 tsp
Salt to taste
Shallots-3 chopped (optional)
Ghee as required
Beat together all the above ingredients in a bowl with a fork.Now pour half of the mixture over the Dosa and spread the egg mixture by tilting the pan. If you are adding chopped shallots,Sprinkle it over the eggs now.
Pour half a tsp of ghee & cook this Egg Dosa over medium heat till the sides starts to brown/comes off the pan.Turn this egg Dosa and cook the other side for a minute. The Egg Dosa is ready to serve with some Chutney or Sambar.
For Egg n Cheese Dosas
4.Cheese cubes -2
or grated cheese -1/4 cup
After adding the egg over the Dosas coo it for few seconds so that its a little firm,spread a cheese cube or sprinkle the grated cheese over it and cook till the Dosa is cooked through.Fold the Egg n Cheese Dosas & Serve with some Chutney.
