Banoffe Slices
For the crust
1.All purpose flour-1 cup
Baking powder-1 1/2 tsp
Salt-1/2 tsp
Sugar-1/4 cup
Butter-100 gm
Melt butter and stir in the sugar.Combine the flour,baking powder & salt and add to the butter and sugar mixture.
Line a 9" square baking pan with baking paper (which I forgot to do & resulted in some scratches to my baking tray) with paper extending sides by 2".(sothat u can remove the Banoffee by pulling up with the extended papers)
Press the crust mixture firmly over base of pan and bake in a preheated oven at 180 C for 15-20 minutes until slightly brown.Remove & cool
2.Dulce de leche-1 tin
I made the dulce de Leche in a pressure cooker.For this take a tin of condensed milk,remove it's label.let it stand in the pressure cooker.Pour water in the cooker until the can is well immersed. Now close the cooker & put weight.Heat the stove and place the cooker on it.Once you here a whistle,turn down the heat to medium and let this cook for 1/2 an hour.After 1/2 an hour off the stove and let it cool.Once cooled,remove from water and wipe with a cloth. This can be stored out till you open it and use.Once opened keep refrigerated.
Warm milk-1/2 cup
Take dulce de Leche in a bowl and add enough milk to dilute it to a spreadable consistency.
Spread this over the cooled crust. This is the second layer of your pudding .Refrigerate for 15-20 minutes.
3.whipping cream-250 ml(I used almariah fresh whipping cream)
U can use the whipping powder also for this.Whip according to instructions on your pack.
Sugar powder-2 tbsps
Whip the cream with sugar and keep aside.
4.Banana-2-3(I used robustas)
Slice the bananas and arrange over the dulce de Leche. This is the 3 rd layer.
Now pour the whipped cream over the sliced bananas and smoothen top.Decorate with grated chocolate.Cover the tray with a cling film and refrigerate overnight or 3 hours.
Remove the Banoffee from the tray by lifting it using the extended baking papers.Slice and serve. This should serve 20 people. @ Dubai, United Arab Emirates
