Soft Star shaped potatobread filled with a sauce of cooked apples,sugar,cinnamon & cornstarch.

The recipe for

Applesauce Star Bread

1.For the dough

All purpose flour-2 1/2 cups

Unsalted Butter-2 tbsps

Salt-1 tsp

In a big bowl mix together all the above ingredients together.

2.Potato-1 medium

Peel and cut the potato into small pieces .Add 1/2 cup water and cover and cook till done.Drain water and set aside the water.Mash the potato without any lumps (it should be 1/2 cup once mashed).Add to the dry ingredients above

3.Milk powder-3 tsp

Lukewarm water-3/4 cup

Instant Yeast-2 tsp

Sugar-2 tbsps

In a glass/bowl mix all the above ingredients and set aside to rise.Once frothy add to the flour mixture and form a sticky dough by adding extra lukewarm water if required.Knead this for 5 minutes to get a smooth dough.Transfer the dough to an oiled bowl .cover it with a lid and set aside the dough to rise. The dough should double.This might take 45 minutes to 1 hour.

For the Applesauce

4.Apples-2

Lime juice-of 1 lime

Cinnamon powder-2 tsp

Sugar-1/2 cup(adjust according to ur sweet level)

Water-2 tbsps

Cut the apples into small pieces. In a pan add the cut apples and all the above ingredients and cook till the apples are well cooked .Once cooled grind this to paste.

5.Corn flour-2 tsp

Water-2 tbsps

Dissolve the cornflour in water and add to the above ground apple paste and cook till it thickens.Set aside to cool.

Once the dough has doubled,punch it and divide into 4 equal parts.Make balls and roll it into thin round discs.

Place the first disc over a parchment paper .Spread 1/3 of the filling over this,leaving some dough around the edges.Place the second disc over it and spread the applesauce over it.Repeat this for the 3 rd disc too.Now place the 4 th & final disc over the filling and seal the ends with a fork.


Place a glass in the center of the dough circle .Now with a bench knife or sharp knife cut from the glass edge to the outer edge.Repeat this on the opposite side too to get 2 even sides.Now cut from the middle of each side to get 4 equal parts.Again divide each part into two to get 8 equal parts.Again divide each part into two so that u r left with 16 equal wedges.Using two hands ,pick up 2adjacent dough strips and twist them away from each other twice so that the top side is facing up again .Pinch the edges together to get a star like shape.Repeat with the remaining strips of dough so that you end up with 8 pairs of strips .Now remove the glass from the center .Brush the top with beaten egg and sprinkle some white sesame seeds & sugar granules on top.Set this aside for the second rise which might take around 20-30 minutes.

Meanwhile preheat the oven at 200 C.Bake this for 14-17minutes until it’s nicely golden brown on top.Remove the star and brush butter on top.allow it to cool for 10 minutes and then serve.
