Afghani Omlettes
1.Potato-2 medium (1 cup)
Onion-1
Green Chillies-3-4
Tomato-1 big
Pepper powder-1 tsp
Salt-3/4 tsp(to taste)
Olive oil-1 1/2 tbsps
Heat oil and sauté the Chopped potatoes on medium heat for 2 minutes.Sprinkle half of the pepper powder and salt.Add in the chopped onions, green chillies and sauté.Add the tomato chopped and cover with a lid and cook on medium heat till the potatoes are cooked through.
2.Eggs-3
Parsley/Mint/Coriander leaves for decorating
Green chillies-2
Now adjust the seasonings and break the eggs over this and sprinkle salt and pepper.Decorate with chopped greens and chillies.Cover with a lid and cook on medium heat till eggs are cooked.
Note:cook the eggs adjusting how you want the yolks to be,runny or fully cooked through.
