Chakkakuru/Jackfruit Seeds Beef Ularthu
It’s a few ingredients Beef Ularthu where you don’t add any ginger,garlic or any spices or masalas other than crushed chilies and Chilli powder.The crushed shallots, coconut oil,curry leaves and the crushed chilies gives this dish a unique flavor totally different from the usual Beef Ularthu .The humble Jackfruit seeds/Chakkakuru gets a makeover flavor from the beef. It’s a traditional Fort Kochi Style Beef Ularthu which my kids loved.
Chakkakuru Beef Ularthu Recipe
1.Beef-1/2 kg
Onions-2
Chilli powder-1 tsp
Vinegar -1 tbsp
Salt-1 tsp
Marinate the beef with all the above ingredients for 15-30 minutes and pressure cook this till done.
2.Jackfruit seeds/Chakkakuru-30
Remove the outer white cover of the Jackfruit seeds. If this seeds are dried just soak them overnight. If they are fresh just soak them for 1/2-1 hour and slightly scrape the brown inner covers.Halve each Chakkakuru and cook this by adding it to boiling water.Once cooked through,drain the excess water.Set aside
Note:u can pressure cook this seeds by adding 1/2 cup water to it for a whistle.Drain and use.
3.Shallots-3/4 cup
Curry leaves-3-4 sprigs
Coconut oil-2-3 tbsps
Heat oil and add the curry leaves and crushed shallots and sauté till the shallots starts to brown.
4.Crushed Chilli flakes-4 tsp
Chilli powder-1 1/2 tsp (Adjust this according to your spice level.U can reduce it to 3/4 -1 tsp if you don’t want it spicy)
Add the Chilli flakes and Chilli powder
and sauté on low flame.Now add 1/4 cup water and cook till oil separates.
Now add the cooked beef along with the stock to this and cook till the gravy thickens a bit.Add the cooked Jackfruit seeds/Chakkakuru and continue to cook till the gravy thickens.(No need to dry it out).Chakkakuru Beef Ularthu is ready to Serve with some steaming hot rice or Chappathis
